Decadent Paleo Hot Chocolate

This winter I have seriously got into hot chocolate. Went for a walk? Hot chocolate. Going on a road trip? Hot chocolate. Rough day? Hot chocolate. Lol! But really, most nights of the week I find myself with a hot chocolate in my hand, as my daily treat. There’s something so cozy and comforting about it on a cold winter night. 

Unfortunately the hot chocolate packets from the grocery store are filled with chemicals your body doesn’t recognize. My hot chocolate is full of whole food ingredients that won’t confuse your body, and it’s easy to make! 


Decadent Paleo Hot Chocolate

Makes 1 large serving or 2 small servings 

Ingredients 

  • 2/3 cup full-fat coconut milk
  • 1 1/3 cup water or unsweetened almond milk 
  • 2 tbsp maple syrup
  • 1 1/2 tbsp unsweetened cocoa powder or cacao powder 
  • Pinch salt
  • 1/4 tsp vanilla extract (optional)
  • coconut whipped cream (optional)
  • sprinkle of cocoa powder (optional)

Directions

  1. Heat coconut milk and water (or almond milk) in a saucepan over low-medium heat for 4-5 minutes until hot, but not boiling. Or heat in microwave in a mug on high for 1 1/2 minutes. 
  2. Stir in maple syrup, cocoa powder, and salt. 
  3. Continue to heat another 2-3 minutes or 45 seconds in microwave, until cocoa powder has dissolved. 
  4. Stir in vanilla extract, if using. 
  5. Top with coconut whipped cream and cocoa powder, if desired. Serve and enjoy immediately. 

Tip: add 1/4 tsp peppermint extract to make an extra special peppermint hot chocolate!
